Raw Asparagus Salad with Lemon-Miso Dressing

Ingredients

  • 2 bunches of fresh asparagus, in season
  • Lemon-Miso dressing
  • Small handful of chives, thinly sliced
  • Toasted sliced almonds (optional)


Method

  1. Using a good sharp knife, a vegetable peeler or mandolin, slice the asparagus lengthwise as thinly as possible and place it in a bowl. Season with a little salt.
  2. Add the lemon-miso dressing and toss to coat.
  3. Add the chives and almonds and toss once more.


Lemon-Miso Dressing


Ingredients

  • Juice from a large lemon, or two
  • A spoonful of white miso, to taste
  • A drizzle of almond oil
  • A few drops of water, to adjust consistency


Method

  1. Whisk together miso and lemon juice until smooth, add almond oil and whisk in.
  2. Taste for seasoning, it should be balanced between sweet, sour, and salty.
  3. Add a little water if needed to thin to desired consistency. If you add water, taste again and re-season as needed.
